Barbequed goose
This recipe is my personal favorite. It is easy cooking and very healthy.
2 goose breasts
Marinating:
3,3 oz balsamic
2 oz red wine vinegar
10 drops chili sauce (e.g. casa fiesta hot sause)
1 – 2 teaspoon mustard seeds (not necessary but very good)
2 oz French mustard (sweet)
1 – 2 teaspoon Dijon mustard
1 – 2 teaspoon coarse black pepper
4 squashed garlic cloves
Dash of olive oil
Let the breasts lay in the marinating for at least 30 min. before putting them on the barbeque.
Barbeque on high heat for about 10 min.
Treat the goose breast like beef, leave it well red in the middle.
Please note that the meet becomes chewy if it is overcooked.
Slice the meat to fine slices and salt with good coarsed salt before serving.
I recommend on the side:
Green salad with green apples, grapes, strawberries and pumpkin seeds and you favorite salad dressing.
